Chrissie Mughogho Ph D

Dr Mughogho is Dean of Applied Sciences at the University of Malawi and Associate Professor of Food Science in the Department of Physics and Biochemical Sciences. She was previously Vice Principal of the Malawi Polytechnic, a constituent College of the University of Malawi. Dr Mughogho has been involved in teaching and research and has published a number of academic papers in both food science and nutrition. Her main research interest is the analysis of nutrient and anti-nutrient content of indigenous Malawian foods as they relate to the nutrition of people living with HIV/AIDS.

Ezekiel Namacha

Mr Namacha is an ICT technical support specialist at the Malawi Polytechnic, a constituent College of the University of Malawi. He is employed in the Department of Computing and Information Technology in the Faculty of Applied Sciences. Apart from his qualifications in IT, Mr Namacha completed professional courses for CISCO Certifications in IT Essentials I and II, Networking (CCNA), and Linux Administration. He offers tutorials and support to students in ICT and also collaborates in various research projects. Before joining the University of Malawi he worked for an internet service provider.

Medunsa near Pretoria in Gauteng, South Africa, has been an institutional partner of SAfrITaN since its inception. As a historically disadvantaged institution (HDI), students and staff of Medunsa who took part in the research represent a different demographic from that of the other South African partner, the University of Stellenbosch. The participation of Medunsa and the collaboration of the Medunsa Department of Human Nutrition in this regional African endeavour are greatly appreciated. On 1 January 2005 Medunsa merged with the University of the North in Polokwane, Limpopo Province. The combined institution will henceforth be known as the University of Limpopo and the name of Medunsa will live on as the name of the Pretoria campus of the new multi-campus university

Demetre Labadarios Ph D, MBChB

Prof Labadarios is Head of the Department of Human Nutrition of the University of Stellenbosch and Tygerberg Academic Hospital. He completed his nutrition studies (BSc Hons, PhD) at the University of Surrey, Guildford, England, and his medical studies (MBChB) at the University of Stellenbosch. Prof Labadarios is a Fellow of the American College of Nutrition, Extraordinary Professor at the University of the North, and President of the Information Technology for the Advancement of Nutrition in Africa (ITANA). He is also President-elect of the South African Society of Parenteral and Enteral Nutrition, Editor of the South African Journal of Clinical Nutrition, African Editor of Nutrition: The International Journal of Nutritional Sciences, serves on the Editorial Board of the Journal of Parenteral and Enteral Nutrition and is Co-editor of the micronutrient section of Current Opinion in Clinical Nutrition and Metabolic Care.

Debbi Marais M Nutr, RD(SA)

Mrs Marais obtained her masters degree in nutrition with research into nutrition education and is a doctoral student studying ICT and nutrition training. She coordinates the distance education post-graduate programme in the Department of Human Nutrition which has students from all over South Africa, Africa and other continents, as well as from various professional backgrounds. She is also a lecturer in community nutrition and has more than 8 years experience as a community dietitian in primary health care. Mrs Marais has been involved in studies regarding MTCT and infant feeding as well as interdisciplinary research regarding computer-aided learning in disadvantaged communities and interaction in distance education programmes at higher education institutions. She has presented at various local and international dietetics and education-related congresses and attended the GlobalNutrITion Programme in Uppsala, Sweden, in 2004.

Janicke Visser B Sc (Diet), RD(SA)

Mrs Visser is a lecturer in Therapeutic Nutrition at the University of Stellenbosch and teaches, amongst other topics, Medical Nutrition Therapy for people living with HIV/AIDS to undergraduate students. She is currently completing a masters degree on current practices of micronutrient supplementation in the critically ill. She is co-study leader for several HIV/AIDS-related research projects at post-graduate level. Besides HIV/AIDS, her other research interests include oncology nutrition, nutrition in critical care and micronutrients. Mrs Visser is also Research Coordinator for the Department of Human Nutrition and is Editorial Assistant to the South African Journal of Clinical Nutrition (SAJCN). She has presented at various dietetics and nutrition congresses and symposia, including presentations related to HIV/AIDS.

Irene Labuschagne B Sc (Diet), RD(SA)

Ms Labuschagne obtained her B Sc Dietetics degree at the University of Stellenbosch, 1997. Her main interests are media interaction, patient consultations telephonic consultations (mostly public, dietitians and the media on all aspects of nutrition and health). She is the author of the following NICUS fact sheets: “HIV/AIDS: Late 70's: The Slim Disease: now, the epidemic", "HIV: should we review our current recommendations and prescribe food combinations?", and “Tuberculosis and nutrition”. Ms Labuschagne was responsible for the dissemination of these to the public, mass media and health professionals. She presented nutrition and HIV/AIDS training as part of the Comprehensive Plan for HIV/AIDS Care, Management and Treatment in the Northern Cape Province.

Mr Kennedy obtained his masters degree in nutrition with research into nutritional supplementation for people living with HIV/AIDS. He was the author of the South African National Guidelines for People Living with TB, HIV/AIDS and Other Disabling Disorders for which he received the prestigious 2004 ADSA-FLORA Award for a Registered Dietitian in South Africa [RD(SA)] who made an outstanding contribution to the field of nutrition and the profession of dietetics over the past five years. His publications, both locally and internationally, include a number of articles and two book chapters in the field of nutrition and HIV/AIDS. He has collaborated and consulted on various national, regional African and international policy, training and research projects and has presented at local and international dietetics and nutrition congresses.

Thokozile E Sibiya Ph D

Dr Sibiya obtained her doctorate in Applied Human Nutrition with research into maternal and infant nutrition in Swaziland. Her academic career spans over 20 years in teaching, research, community interaction and private sector collaboration. She has acquired considerable experience in applied nutrition and more importantly management of the dynamics of delivering various practical services. She is currently passionately involved in the various intervention, management and support initiatives in the SADC region in ensuring that nutrition features in HIV/AIDS programs, particularly in Swaziland. She has collaborated and consulted on various national, regional and international training and research projects.

Martha N Musukwa B Sc (Agric), M Sc

Ms Musukwa is a lecturer in Nutrition and Animal Production in the Department of Animal Science of the School of Agricultural Sciences at the University of Zambia. She is a researcher in both human and animal nutrition. Her work includes the updating and revising of food composition data of Zambian foods and the development of a field guide of Zambian edible plants and their medicinal uses.
Drinah Banda Nyirenda Ph D

Dr Nyirenda has been the Executive Director of the Programme Against Malnutrition (PAM), an implementing NGO coordinating nutrition and food emergency and food security agricultural recovery programmes among vulnerable rural communities in Zambia, since 2002. Before this she was a Senior Lecturer in Nutrition at the School of Agricultural Sciences, University of Zambia, and Promoter in the Food Science & Technology Department. She has 25 years experience in agriculture, nutrition and food security projects and university teaching and research in Zambia. C urrently she designs nutrition intervention projects for the Zambian Network on HIV/AIDS and community responses to HIV/AIDS in Zambia.

Alice Nkungula Ph D

Dr Nkungula has been a lecturer in food and nutrition lecturer since 1988 for the B Ed and M Ed (Home Economics) programmes in the Department of Technical Education at the University of Zimbabwe. Prior to that, she taught food and nutrition at secondary schools after serving as Food Service Director for the 1500 bed Harare Hospital. She is a qualified teacher and a Registered Dietitian with the American Dietetics Association. She earned her PhD in Extension Education (Nutrition) at Michigan State University, USA.

Britta Ogle-Brittenson Ph D

Dr Ogle-Brittenson holds a Ph D in Nutrition. She is a lecturer and researcher in nutrition in the Department of Agriculture and Rural Development at the Swedish University of Agricultural Sciences in Uppsala, Sweden. She is also the director of the Global NutrITion programme and has 35 years of experience in working with nutrition in low-income countries.

Dr Chiwona-Karltun holds a PhD in International Public Health from the Karolinska Institutet, Sweden and has interdisciplinary research experience within the fields of medicine, food science, nutrition and agriculture. She has been lecturing at undergraduate and graduate level in the area of International Public Health since 1991. She is one of the founders of the Global NutrITion programme www.globnut.net. Her research focuses on resource-poor members of society and the relationship between poverty, hunger, health and HIV/AIDS. She is also an active partner of the non-governmental organisation Noah's Ark-Red Cross Foundation www.noaksark.redcross.se that works with HIV/AIDS and provides support for people living with HIV.

Mr Westman is both a qualified medical practitioner and engineer . He has been working with the integration of e-learning and other technical components into university-level teaching since 2000. He is a founder and main programmer of the Virtual Training Studio project www.vthost.com
